For me, Spain is all about easy and simple foods made from local, in-season produce.
Pan con Tomate, or pa amb tomàquet (Catalan for “bread with tomato”), is a simple, traditional Catalan dish. It consists of toasted bread rubbed with garlic and ripe tomato, then drizzled with olive oil and sprinkled with salt.
It’s a staple in Catalonia, served as a snack, breakfast, or tapa, often as a base for other toppings like ham or cheese.
I found myself eating pan con tomate (bread with tomato) every single day as a snack, breakfast meal, or tapa.
The key is using good quality, ripe tomatoes and rustic bread, with the tomato pulp rubbed directly onto the toast.
It’s so simple, delicious, and healthy. Here’s how you can make it at home!
Pan con tomate will be ready in 10 minutes!
Ingredients
- 1 whole room-temperature tomato (I like to use Roma)
- 2 slices of your choice of rustic bread. I love ciabatta rolls and usually get a bag from Costco.
- 1 sliced garlic clove to rub on bread.
- Extra Virgin Olive Oil (to taste)
- Salt & Pepper (to taste)
Instructions
- Grate the tomato into a bowl. It will turn into a spreadable pulp.
- Add olive oil, salt, and pepper to taste.
- Toast your bread.
- Rub your cut raw garlic onto the bread.
- Spread the tomato paste over the bread and enjoy it with some sunshine.
It’s so simple yet satisfying. I love to add mashed avocado on top. Gives it some butteriness.
For a more savory version, add some roasted garlic spread onto your bread before topping with the grated tomato.
