We are OBSESSED with Costco’s $5 rotisserie chicken. I use it for a range of dishes such as salads, soups, tacos, and much more.

Here is my guide to dishes you should make with your Costco rotisserie chicken!
#1 Pho
We love making pho with our leftover carcass. Use this Costco Chicken Pho Recipe. It’s so easy and delicious!
#2 Chicken Tacos or Quesadillas
We love grabbing some tortillas and cheese when we get our rotisserie chicken.
It’s so easy to cut or shred chicken and make them into easy tacos and quesadillas. We love making a lime crema (sour cream, lime juice, lime zest, salt, and pepper) and guacamole to accompany the mains.
#3 Chicken Porridge
I love making my WAP (Wet Ass Porridge) with the leftover chicken carcass.
#4 Ginger Rice + Cucumbers
We love taking the carcass and making a broth. Use some of the broth to make a savory rice and add 1″ of ginger to cook the rice. Add some bouillon if needed. Then serve with shredded chicken and cucumbers. It’s SO GOOD!
#5 Salad
Chicken in a salad is an easy idea. We love using a lettuce mix and then adding tomatoes, avocado, and red onions. Choose a dressing of your choice.
#6 Spring Rolls
Spring rolls are an easy way to eat healthy. Simply add veggies and shredded chicken into your spring roll wrapper and roll it up. I typically eat 2 to 3 in one meal.

#7 With Potatoes & Veggies
I love air frying or baking some potatoes and veggies to eat with my chicken.
#8 Air Fry the Skin
Don’t throw the skin away! Separate it from the chicken and air fry it for a crispy snack. I love dipping it in ranch.
#9 Mexican Bowls
#10 Add to Pasta Sauce
I LOVE adding shredded chicken to Alfredo pasta. It’s also great with a lemon butter sauce for those who are more calorie-conscious.
#11 Chicken Tostadas
Chicken tostadas are SO EASY. It’s a great snack or meal for the entire family.
Shred an entire rotisserie chicken, then add mayo (to taste), and a can of mixed veggies (drained). Add salt and pepper to taste. Top onto a crispy toastada shell.
So easy and SO GOOD!
#12 Chicken Nachos
Turn the oven onto 325 F. Fill a tray with tortilla chips then top with shredded chicken, guac, Mexican cheese, beans, sour cream, and hot sauce/salsa.
Pop it into the oven for 12 minutes and enjoy your tasty chicken nachos!
#13 Chicken Grilled Cheese Sandwich
Grilled cheese sandwiches are my favorite!
#14 Chicken Noodle Soup
Throw the carcass into a pot, add 2 minced garlic cloves, 5 cups of water, 1 tbsp of Italian seasoning, and salt and pepper. Cook on medium heat for 20 minutes. Remove the bones.
Add 2 stalks diced celery, 1 diced onion, and 2 diced carrots and dry pasta. Cook for 8 minutes and then add shredded chicken at the end. Now you have a delicious chicken noodle soup!
#15 Instant Noodles
I love adding Costco chicken and fresh veggies to any instant noodles I prepare.
