Here is my guide on how to eat Gejang, Korean raw marinated crab.

Soy sauce crab or Ganjang Gejang (간장게장) is a marinated crab dish that has a complex, bitter, and umami flavor. It is fermented for up to three days in a marinade that is cooked, chilled, and then re-added to the raw crab to further ferment.

The flavors will be a combination of bitter, savory, and umami.

How to Eat Gejang

#1 Alone

You can literally suck the meat from the crab bodies and eat it as is. It’s very savory, packed with umami, and tastes so good!

It’s best practice to wear gloves and then squeeze and crack the bodies to extract the meat by sucking. You may need to spit out shells, but it’s worth it for the flavorful crab.

#2 Over Steamed Rice with Sesame Oil

To cut the saltiness, you can also eat it with steamed rice with a drizzle of sesame oil. This creates a “rice thief” meal where the rice balances with the marinated crab.

I love the creamy roe (orange parts) mixed with steamed rice.

#3 Wrapped in Sesame Leaves with Toasted Seaweed

I like to take it a little further and add the crab and steamed rice mixture into a wrap using sesame (or parilla) leaves and add toasted seaweed for added crunch.

It’s so good, and you’ll want to eat 10 of these wraps!

#4 With Chilled Noodles

I can’t live a day without noodles, so I love to add the gejang to chilled green tea soba noodles. We go through 1-2 packs of these noodles each month.

It takes 4 minutes to prep the noodles and really brings out the flavor of gejang with every slurp.

You can also try it with rice noodles or instant ramen. The world really is your oyster.

#5 Save the Marinade!

Don’t throw away your leftover gejang sauce!

Hard-boil some eggs and marinate them in the sauce for tomorrow. You can eat the marinated eggs with rice, and it’s still SO GOOD!
