Lemon Butter Pasta (LBP) is a refreshing pasta recipe that typically uses pasta (like spaghetti or fettuccine), butter, lots of fresh garlic, lemon (zest and juice), grated Parmesan cheese, and fresh herbs, with optional red pepper flakes for heat.

It’s super easy to make and is so satisfying during warmer weather.

Ingredients

  • 1/2 a box of spaghetti or fettuccine pasta
  • 2 tbsp unsalted butter
  • 1/3 cup of sliced lemon rind (about 2-3 lemons)
  • 2 cloves garlic, grated
  • 2 cups of Lemon Tea to cook the pasta
  • 2/3 cup grated Parmesan cheese (or to taste)
  • 1-2 tbsp fresh lemon juice
  • 1 tsp kosher salt
  • 3/4 tsp freshly ground black pepper
  • 2 tbsp lemon zest to garnish
  • 1/4 cup chopped fresh parsley or mint
  • 1 tbsp of red chili flakes, if you want some heat

Instructions

  • Make lemon tea: Boil 4 cups of water in a large pot, then add sliced lemon rind over medium heat for 8 minutes.
  • Strain 2 cups of lemon tea into a separate pan.
  • Boil the lemon tea and add salt, garlic, pepper, and your pasta of choice. Boil for 8 minutes.
  • Once most of the lemon water has been absorbed by the pasta, add butter, herbs, Parmesan, red chili flakes, and salt and pepper. Add more lemon tea to ensure the pasta sauce is silky and smooth.
  • Finish the dish with a parsley or mint garnish and lemon zest. Add more Parmesan and lemon juice to taste.

You may have extra lemon tea leftover. You can drink the rest or let the rinds steep for your next batch of LBP. We love how slightly bitter the water gets when steeped overnight. Makes the next batch of LBP extra yummy!
